Serving– 3 to 4

Ingredient:

For Pakoras:

Besan- 1 cup

Onion – 1 Medium sized thinly sliced

Potato- 1 medium fined chopped

Red chili powder- 1/2 tsp

Turmeric powder- 1/2 tsp

Carom seeds or ajwain – 1/2 tsp

Ginger garlic paste- 1 tsp

Green Chili- 1 finely chopped

Asafoetida or Hing- one pinch

Salt- as per taste

Green Coriander leaves- 1 tbsp chopped

Water- as required

Oil- for deep frying

For Kadhi:

Sour Curd or Khatta dahi- 1.5 cup

Water- 5 cups

Besan- 7 tbsp

Oil- 1 Tbsp

Cumin seeds- 1/2 tsp

Mustard seeds- 1/2 tsp

Turmeric Powder- 1 tsp

Curry leaves- 5-8

Ginger- 1 inch piece grated

Asafoetida: 1 pinch

Green chili- 2 chopped

Salt- as per taste

Green coriander leaves- 2 tbsp chopped

How to make Kadhi Pakora :

For Pakoras:

  • Combine all the ingredients (except oil) and make thick batter.
  • Heat the oil in a pan for frying the pakoras.
  • Drop spoonful of batter into the hot oil by using your fingers. Drop 5 – 6 pakoras in single batch.
  • Fry the pakoras until they turn golden brown in color.
  • Drain the pakoras on kitchen paper napkin and keep it aside.

For Kadhi:

  • Whisk the sour curd till smooth.
  • Add besan in the curd and whisk again, now add water and mix well.
  • Heat the oil in deep thick bottom pan, add mustard seeds, cumin seeds and let them crackle.
  • Add chopped green chili, hing and curry leaves, fry for a sec on low flame.
  • Add grated ginger, turmeric and red chili powder.
  • Add curd besan mixture and bring to boil, stir occasionally in between to prevent sticking.
  • Cook for 10 to 15 mins on low flame or until raw taste and smell of besan goes away.
  • Add salt and pakoras mix well and cook for 5 mins.
  • Switch off the flame and cove the pan with lid for 5 to 10 mins, so that pakoras can absorb the kadhi.
  • Garnish with chopped green coriander leaves. Punjabi Kadhi Pakoda is ready to serve.
