Rajasthani Gatte ki Sabzi

Serving– 3 – 4

Ingredients :

For Gattas :

Besan – 1 Cup

Carom seeds or Ajwain

Asafoetida or Hing – one pinch

Green chili- 2 chopped or crushed

Ginger garlic paste- 1 tsp

Turmeric – 1/2 tsp

Red chili powder- 1/2 tsp

Curd- 1 tbsp

Oil – 1 tbsp

Salt- as per taste

Water- as needed

For Gravy :

Oil – 1 tbsp

Asafoetida or Hing – one pinch

Mustard seeds- 1 tsp

Green chili- 1 chopped

Ginger garlic paste- 1 tsp

Red chili powder- 1 tsp

Turmeric powder- 1/2 tsp

Coriander powder- 1/2 tsp

Curd- 1 cup

water- 1/2 cup

Salt- as per taste

Green coriander leaves- 2 tbsp chopped

How to make Gatte ki Sabji:

For the Gattas:

  • Combine all the ingredients for gattas with enough water to make a soft dough. Knead well.
  • Divide it into equal portions and  shape each portion into long cylindrical roll.
  • Boil enough water in a pan to cook the gattas.
  • Add gattas in boiling water and boil them for 5-10 mins or until they start floating on the water surface.
  • Remove the gattas from water and cut into 1 inch pieces when cool down. Keep it aside.

For Gravy:

  • Heat the oil in a pan and add mustard seeds, let them crackle.
  • Add hing, chopped green chili and ginger garlic paste. Saute for a min on low flame.
  • Add turmeric powder, coriander powder and red chili powder, mix them well.
  • Add gattas and fry them for 2 mins on low flame.
  • Add 1/2 cup of water on high flame and when it starts boiling reduce the flame.
  • Beat the curd till smooth.
  • Add curd  and salt to the masala and mix well.
  • Cook for 5-6 mins on low flame.
  • Serve hot, garnish with coriander.
